When making veganized meat sauce (köttfärssås) forget about soy or other meat substitutes. Go into the woods and find some Sheep Polypore (Fårticka, Albatrellus ovinus).

Albatrellus ovinus is common, easy to identify, there are no poisonous mushrooms with which it can be mistaken and it often grows quite large.

It doesn't taste great on its own, however its consistency is excellent for grating, making this mushroom a superb meat substitute.

I think it tastes way better than soy meat.
